Truffle

Truffle cannot be cultivated: it must be found. In the oak and holm-oak woods of Vocabolo Merolfo, hunters set out at dawn with their dogs — noses trained over years — to follow the scent rising from the ground. The prized black truffle (Tuber melanosporum) and scorzone (Tuber aestivum) grow in symbiosis with tree roots; each harvest is unique, tied to the season, the rain, the night temperature. We bring all of this into our preparations: fresh truffle and products that preserve its aroma.
